A hybrid of wild mandarin and lemon, Yuzu is incorporated into a lightly salted butter. Elegant and fresh, it wonderfully coats a cod fillet cooked in foil with its sweet bitterness. On toast with a bed of strawberry jam.

Yuzu is a citrus fruit native to Eastern Asia, it is a hybrid of wild mandarin and lemon. It resembles a small grapefruit and grew wild in central China and Tibet and was later introduced to Japan and Korea.

The taste of Yuzu resembles that of grapefruit with mandarin tones.

It is rarely consumed as is but its zest in Japanese cuisine is used to garnish certain dishes and its juice is used for seasoning, a bit like lemon juice.

I wanted to incorporate it into a lightly salted butter. The taste result of this harmony is truly remarkable. Butter is a flavor fixer which in this case really enhances the Yuzu. This Butter becomes ideal for a sunny kitchen, it brings verticality, elegance and freshness to the food it accompanies.
